Amaranth — Processing

Metadata research draftEvidence limits

⚠️ Status: drafted from the literature survey. The postharvest human-scale gap is the defining issue for this crop — the academic set is nearly silent on manual threshing/winnowing/cleaning (see research/amaranth-seeds/report.md §6). Values Unknown until practical/grower sources and original experiments are registered.

dry plants/panicles → thresh → winnow → clean → sort → grain

  • Separating tiny seed from dry panicles by hand (rubbing/slapping against a screen or in a bag). No academic standard at hand-scale; flag for grower sources + experiment. Time and loss per kg — Unknown/Needs experiment.
  • On the plus side: seed is dry and comes free of a dry panicle (not gummy like chia’s mucilage), so manual threshing is expected easier than chia — to be confirmed.
  • Tiny seed + light chaff; winnowing with screens/sieves feasible — flagged (small-scale seed-cleaning literature: 10.1201/b10312-68, 10.3390/agriengineering7060179). Mesh sizes Unknown.
  • Screen and aspirate to remove chaff and immature seed; grading — Unknown. Roller milling of amaranth grain is a food-science topic (10.1016/j.jcs.2016.11.006), separate from hand-cleaning.
  • Popping (dry-heat pops the small grain — “alegría”) — candidate: popping alters anti-nutritional compounds and digestibility (10.3390/foods11142075). Popping method at small scale — Unknown/Needs experiment.
  • Whole-grain, flour, flakes — flour/bread studies exist (10.1016/j.lwt.2012.07.031).
  • Screens, sieves, cloth; simple threshing tools/bags. Buy vs improvise — Unknown.
  • Candidate EX: hand-thresh 1 kg dry amaranth panicles: time and loss. Log in open-questions.md. Needs experiment.
  • Feeds processing (threshing_method, manual_time_h_per_kg, winnowing_feasible).
